This is a perfect stick to your ribs kind of breakfast. When we went to the pumpkin patch {back in October} I thought this would be the perfect way to start off our morning and I was right!
I made it in my crockpot, overnight, so it was ready first thing in the morning!
This recipe is so easy to put together and makes great leftovers!
Pumpkin Spice Steel Cut Oats
adapted from Sugar-Free Mom
Ingredients
- 1 cup steel cut oats
- 4 cups water
- 1 cup canned pumpkin
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 teaspoon cinnamon
- 1/2 cup honey
- Combine all ingredients in your slow cooker and cook on low overnight or 8 hours.
- To serve stir contents of crockpot, the top will be crusty, and spoon into a bowl. Drizzle with more honey.

It is cold here...yesterday it was nice, so nice I could run around with out my jacket on...but today the temp has dropped and there is a winter storm advisory. We are supposed to get around 3 inches of snow. This is just the kind of breakfast to warm you up on a day like we are expecting to have tomorrow!
